Coconut & Hearts of Palm Ceviche

VEGAN CEVICHE! Disclaimer: No fishies were harmed in the making of this ceviche. Yes, this is a real thing, made with hearts of palm; super fresh, tangy & delicious.

Coconut & Hearts of Palm Ceviche.pngIf you’re unfamiliar with ceviche, it’s a Peruvian (YES, IT’S PERUVIAN, NOT MEXICAN OR SPANISH) dish in which various raw seafood is “cooked” with the acidity of citrus fruits juices, which makes the protein edible. To be honest, I’ve never liked seafood, and I always thought of this dish as a bit odd, considering that it’s literally raw fish.

A couple of months ago I saw a youtuber’s vlog and they were enjoying vegan ceviche, but they never really explained what it consisted. So, I did a little research, I googled it, and I found that the best replacement for the raw fish in ceviche was coconut meat & hearts of palm.

The best thing about it? Since there is, obviously, no seafood in this dish, you don’t have to wait for the lime to cook the ingredients! This hearts of palm ceviche is instantly ready to be enjoyed with chips, in a salad, with some quinoa, and even as a taco filling (or if you’re like me, eat it straight from the bowl). You really can’t go wrong with this one!

IMG_0032Recipe: Coconut & Hearts of Palm Ceviche

Ingredients

  • 1 can heart of palm, thinly sliced
  • ½ cup thin coconut flakes
  • 1 yellow summer squash, chopped
  • 1 small can of black beans, drained & rinsed
  • ½ cucumber, chopped
  • ½  red onion, thinly sliced
  • 2 garlic cloves, chopped
  • 2 limes, zest & juice
  • 1 tbsp coconut oil
  • salt & pepper to taste
  • handful parsley, finely chopped
  • handful green onions, chopped

Procedure

  1. Add all of the ingredients to a bowl. Mix in the lemon juice and coconut oil.
  2. Season with salt & pepper, add the green onions & parsley, as well as the lemon zest.
  3. Mix until everything is combined.
  4. Serve with some chips; I chose quinoa chips.
