Collaboration with Ponte Creativo ¡Cocina!

Last week I was contacted by Ponte Creativo ¡Cocina! to see if I was interested in participating in a project. They prepared a box full of vegan-friendly products for me to make a recipe that they had already prepared for me. This project was part of “El Día de la Familia a la Mesa”, celebrated on September every year. This initiative is meant to bring families back to dinner tables by La Camara de Mercadeo, Industria y Distribución de Alimentos de Puerto Rico.

Different Content Creators and Foodies, including me, got personalized boxes with a specific recipe to follow. Here are some of the things that I got:

¿My challenge? Crispy Chickpeas. This was the result:

Recipe: Crispy Chickpeas

By: Ponte Creativo ¡Cocina!

Ingredients:

  • 2 cups chickpeas, cooked
  • 2 garlic cloves, minced
  • 1 lemon
  • ½ tsp cumin
  • ½ paprika
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley

Procedure:

  1. Drain and rinse chickpeas well.
  2. To a large pan, add olive oil and warm up to medium heat.
  3. Add garlic to warm oil, and cook until golden.
  4. When the garlic is cooked, add in the chickpeas along with the cumin, paprika and, salt & pepper. Mix well.
  5. Add in some lemon zest, and mix well.
  6. Sautee the chickpeas for about 10-15 minutes, until golden.
  7. While the chickpeas are cooking, wash & chop the parsley finely.
  8. After the chickpeas get golden, remove from heat. Add in the fresh parsley & the juice of one lemon.
  9. Serve as desired, and enjoy!
