Today I’m back with yet another recipe from my Holiday series! Since the beginning of October, I’ve been sharing recipes for you to create for the upcoming festivities. The third recipe? Stuffed Bell Peppers, but not regular bell peppers, JACK O’ LANTERN BELL PEPPERS. When I ran into Lauren Conrad’s Stuffed Peppers Jack o’ Lanterns, I couldn’t wait to make a vegan version. Not only are they pretty simple to whip up, but it’s also a fun kid-friendly recipe!
Stuffed bell peppers have always been one of my go-to’s; I always enjoy the different ways that they can be made & stuffed. The VeggieJeva’s version of stuffed bell peppers is healthy and simple. It features orange bell peppers stuffed with a comfort food mixture of quinoa & veggies. I looooove cooking with peppers; red, yellow, orange, and green. They all bring such an amazing flavor and color to the meals that I make.
However, the best part is that you can get really creative with it and play around with the faces and the stuffing. The only tricky part might be carving the peppers, just make sure to have a sharp knife. If you’re looking for a little pumpkin carving practice, these bell peppers are for you!
How to: Cook quinoa with veggies; I added garbanzo beans, celery, carrots, mushrooms, and onions. Cut the top part of the bell peppers and remove the seeds. With a sharp knife, carve the eyes & mouth of the Jack o’ Lanterns; make sure to give your veggies a spooky smile. The stuff with your favorite stuffing; you can leave them as it is, and eat them raw or you can bake them.
Here are a few ways to get creative with the stuffing:
- Spaghettis with bell pepper sauce
- Risotto
- Fresh veggies
- Ground sautée mushrooms
Notes:
- Make sure to choose bell peppers that stand on their own. If that’s not the case, you can use the knife to shave off a little bit from the bottom.
- To make carving easier, I use a small sharp knife.
- If using this recipe for a party, try stuffing the peppers with different stuffings to create variety.
