Cielito Lindo is an appetizer, well known in Puerto Rico for being one of the ultimate gathering dip, perfect for serving at parties, birthdays or meetings. This particular recipe tends to vary according to the taste of the person who makes it, and it’s traditionally not vegan, but follow these easy steps to build your own Vegan Cielito Lindo (7-Layer Dip).
First thing first, LAYERS. There are multiple recipes out there, but traditionally there are 5 to 7 layers. So choose your layers, but keep it basic: refried beans or soy ground, vegan sour cream, and guacamole. Then move to your veggies: do one layer of tomatoes or bell peppers, another one of greens and other veggies. Also choose your top layer toppings: vegan shredded cheese, olives, green onions, herbs, more tomatoes, etc. you choose!
For this recipe, I’m sticking to 7 layers (bottom to top): 7. refried beans, 6. guacamole, 5. vegan sour cream, 4. salsa, 3. lettuce, 2. vegan shredded cheese, and 1. tomatoes. This is how I traditionally love my Cielito Lindo, and I love it cold. However, if you add soy ground and vegan shredded cheese, you can totally warm it up in the microwave so the cheese melts. Also, you can choose to either make this from scratch or to use store-bought ingredients.
My favorite way to eat this dip is with tortilla chips (or any chips actually), but it’s also a great dip to enjoy with carrots and/or celery sticks. Or, you know, you could just grab a spoon and dig in! No judgment here, just enjoy!
Notes:
- Feel free to switch out the refried beans for vegan ground beef, or you can even do both.
- Instead of using diced tomatoes, you can use pico de gallo or even mango salsa.
