Vegan Beer Batter Onion Rings

Let’s talk about Onion Rings for a minute. What makes a good onion ring? For me, it’s the crispiness & fluffiness. But the type of onion used plays a major role, always go with the sweet yellow onion. Now when making Beer Battered Onion Rings, the beer used is key. A light beer will do the trick, it flavors the batter and while adding body.

My favorite part about this recipe is that it’s super versatile. You can make it with different beers every time to get a unique & distinct flavor. I chose a Corona Light, and I’m dreaming of making them with a classic Blue Moon or with our local Ocean Lab B.O.B.. You can also play with the thickness of the onions, thin or thick makes a world of a difference; you choose.

Vegan Beer Batter Onion Rings

Ingredients

  • 2 medium-size yellow onions, sliced in rings
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • 1 cup light beer
  • 2 tbsp cold water
  • Salt & pepper to taste
  • Vegetable oil for frying

Procedure

  1. Whisk together 1 cup flour, the salt, pepper, and baking powder in a medium-sized bowl. Whisk in beer and ice water until combined.
  2. Place remaining cup flour in a shallow dish. This will be to dredge the onions.
  3. Heat oil in a large frying pan over medium-high.
  4. While the oil is heating up, dredge onions in flour, turning to coat; tap off excess.
  5. For better results, work in batches; don’t crowd the frying pan. After dredging, dip onions in batter and shake off excess. Carefully add to hot oil. Cook until golden brown, about 2 to 3 minutes.
  6. Transfer to paper towels to drain, and immediately sprinkle with salt.
  7. Serve with your favorite dipping sauce, and ENJOY!
