2-Ingredient Vegan Gnocchi, that’s pillowy & comforting, without taking too much of your time!

Of all the homemade pasta options, gnocchi is my favorite! Mostly because there’s no need for machinery and there’s very little preparation needed. It does take some work to make gnocchi from scratch, however, the process results in soft pillowy pasta with just 2 ingredients that you probably already have at home.
What is Gnocchi?
Gnocchi is a small dumpling-like pasta made essentially from starches; usually potatoes and flour. Although many other varieties exist, like with eggs & oil, I believe potatoes and flour are the only ingredients needed for traditional gnocchi.
This recipe will not require much of your time, and gnocchi are known for being extremely versatile. So you can play with different starches and ingredients to achieve new and tasty variations whenever we want.
Variations
- Sub the potato for sweet potato, butternut squash, beetroot or carrot.
- Make a gluten-free version by subbing the regular flour for chickpea flour.
Also, get creative with the sauce! I made mine with my vegan alfredo sauce recipe, but don’t be afraid to try gnocchi out with these sauces:
- Classic Vegan Bolognese
- Oil & Garlic
- Vegan Pesto
- Vegan Brown Butter & Sage

What to serve with Gnocchi?
Along with the soft Vegan Alfredo Gnocchi, I made some vegan Italian sausages with sauteed bell peppers & onions. And of course, no Italian dish can be complete without some garlic bread. The bread is perfect for picking up all the vegan alfredo sauce.
Make sure you pair this dish with your favorite wine; we certainly did!
