With this recipe you can prepare Dutch Apple Pie Bars that are completely different from the traditional recipe. It’s so easy to make that you will not believe that it’s ready for the oven in minutes. The result is a delicious and sweet delight with a crunchy coating.
Vegan | Gluten-free | Soy-free
If there is a combination of fruit and spice that never fails, it’s apple and cinnamon. Together they create warm and decadent desserts that fill our minds with cozy memories.
Dutch Apple Pie, is basically an apple pie with a crumbly topping, hence why sometimes it’s also called Apple Crumble Pie. I personally love this crumble pie more than the traditional apple pie, because of the combination of textures in it: caramelized apples as stuffing and the crunchy topping everywhere else.
However, I decided to kick it up a notch and make the dutch apple pie into a dessert that can double as a breakfast. With nothing but good-for-you ingredients, you can enjoy this recipe with some coffee in the morning or topped with some vegan ice cream after dinner.
Notes:
- Make sure to mix the cornstarch with the apple sauce before heating, if not, the cornstarch will clump up.
- Give this recipe at least 30 minutes to cool down and set before cutting the bars. Otherwise, they will fall apart easily (not that I really mind it😂, it’s seriously so good).
- Store these bars in an air-tight container in the fridge for about a week.
Recipe: Vegan Dutch Apple Pie Bars
Serves: 3-6 people
Ingredients
Crumble:
- 1 ¼ cup rolled oats
- ¾ cup coconut flour (can sub for almond flour)
- ½ cup brown sugar
- ½ cup coconut oil, melted
- ½ tbsp cinnamon
- Optional: 1tbsp flax seeds
- Optional: handful of walnuts
Apple Filling:
- 2 large apples (or 4 small ones)
- Juice of 1 lemon
- 4 tbsp cornstarch
- ¼ cup brown sugar
- ½ tbsp cinnamon
- ¼ cup water
Procedure:
- Preheat the oven to 375F degrees and line an 8×8 inch pan with parchment paper.
- Rinse and cut up the apples into small cubes, place in a bowl and mix with lemon juice. Set aside.
- Add all crumble ingredients to a food processor and pulse on low until well incorporated. Be careful to not over mix and get a really small crumble.
- Separate the crumble mix in half. The first half goes at the bottom of the pan and press evenly with your fingers to completely coat the pan. Set aside.
- In a small saucepan to medium-high heat, mix together the apple filling ingredients and cook for 5 minutes, mixing often.
- When ready, pour the apple filling into the pan spreading evenly. Sprinkle the remaining crumble topping on top of the filling mixture.
- Bake for 40-45 minutes or until golden brown on top. Allow to cool for a minimum of 30 minutes (to an hour) before serving so the bars can set.
- Serve as breakfast with some coffee, or topped with ice cream, and ENJOY!
