Okay, I think I may have just invented something… Vegan Avocado Toast Grilled Cheese! I literally cannot find a single piece of evidence of something that resembles this meal.

You may think that there is nothing special about making bread with cheese… that’s somewhat true. But this recipe is intended to give you a remarkable version of the typical grilled cheese.
Meet the perfect combination of an American classic with an Australian classic. This tasty sandwich is loaded with vegan melty cheddar cheese and buttery avocado, complete with crunchy rosemary sourdough.
It’s very easy and quick to make. Although you can make it a little bit more complex by adding other ingredients such as tomato, jalapeños, vegan bacon, mushrooms, or caramelized onions.

Notes:
- For the cheese, choose a vegan cheese that’s known for melting! For American cheese, I like Follow Your Heart, and for cheddar cheese I like Miyokos.
- As for the bread, I love using sourdough. The tangy flavor and slightly chewy texture you’ll find in sourdough is an ideal match to the sharp-tasting cheddar. However, you can use whichever bread you prefer.
- To keep this recipe gluten-free, use gluten-free bread.
- Butter both sides of each slice of bread to get the perfect level of crispiness.
