There are brownies and there are blondies. We can deduce from their name that blondies are known as the blonde version of the classic chocolate brownie. Traditionally made as a sort of vanilla cake (which defeats the brownie part), but also, sometimes as a chocolate chip flavor… 

There are many people who love them, and I’m here to tell you that… sorry, I’m not a fan. Personally, I think blondies are a scam! Like, who decided to remove chocolate from brownies? I mean, where’s the richness, where’s the decadence? Who’s responsible for this?

In my eyes, blondies fall short; most of the time they’re just vanilla cake without the frosting. If you’re like me and completely abhor the idea of a brownie without the chocolate, but still want something different, fear not, I have just the recipe for you: Vegan White Chocolate Matcha Blondies. Seems like the perfect happy medium to me!

The making of: Vegan White Chocolate Matcha Blondies

This recipe has been on my mind for a long time. But I struggled to find the perfect matcha to do so. You see, although matcha has become insanely popular, many brands fall short in delivering good quality, bright green matcha. Thankfully, I’ve found Matcha Bar’s matcha, the brand that put all the other brownish matchas to shame. 

Now, I’m not saying that you have to use that specific brand, however, matcha is not easy to find in physical stores, and most of the ones that you might find, as mentioned above, will be subpar. After all, for this recipe, we do want the greenest and brightest matcha! If you do choose to go with any other matcha, keep in mind that for cooking you should look for one for that specific purpose, otherwise it can be too bitter for the recipe.

One could say that this recipe is the perfect fusion, where the classic chocolate dessert is mixed with the delicate Japanese matcha tea. However for this recipe, we’re using white chocolate… but wait there’s no vegan white chocolate (or there is, I’ve just never seen it)… Fortunately, cacao butter will do just the trick; it tastes just like white chocolate when you mix cacao butter and sugar!

This is one of those recipes ideal to have with a coffee for a snack or dessert. It is delicious, creamy, and crunchy at the same time.

What can you add to these Vegan White Chocolate Matcha Blondies?

There are some flavors that pair well with matcha; here are a couple of ideas for the blondies:

  • Lemon
  • Almond butter
  • Lavender buds
  • Almond extract
  • Macadamia nuts
  • Dried Strawberries or dried raspberries

Notes:

  • Gluten-free? I personally haven’t tried to make this recipe gluten-free. However, most brownie and cake recipes can be made with fine-almond flour and rice flour. The texture will vary with different flours, so keep an eye on the baking process. Extra tip: make sure that other ingredients you have are also gluten-free!
  • Can I add white chocolate chips/chunks to the batter? Absolutely! If you find vegan white chocolate chips let me know; I would love to recreate this recipe with chips!
  • “Wait, where are the eggs?” Apple sauce is the key ingredient to make this recipe extra chewy and fudgy.

Vegan White Chocolate Matcha Blondies

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp matcha powder
  • 1 tbsp baking powder
  • Pinch of salt
  • ½  cup (60g) cacao butter
  • ½  cup vegan butter, melted
  • 1½  cups brown sugar
  • ⅔  cup plant-based milk of choice
  • ¼  cup apple sauce
  • 1 tsp vanilla

Procedure

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together the all-purpose flour, matcha powder, baking powder, and a pinch of salt. Set aside.
  3. Place a saucepan on the stove and add 1-2 inches of water to the pan. Then place a dry, shallow, heat-safe mixing bowl over the saucepan, creating a double boiler.
  4. Add cacao butter and vegan butter to the mixing bowl, melt on low heat and stir constantly.
  5. Then add in the brown sugar and stir until the sugar is dissolved. 
  6. Proceed to add the apple sauce, vanilla, and plant-based milk of choice. Set aside and let it cool.
  7. Add the cacao butter mixture into the dry mixture and mix gently with a spatula.
  8. Transfer the batter into a greased/paper-lined 8x8 square baking pan and smooth the top. 
  9. Bake for 25-30 mins until an inserted toothpick in the middle comes out clean.
  10. When ready, remove the pan from the oven and let it cool down completely at room temperature. Then cut into squares.
  11. Serve as desired. ENJOY!
