Ahhh! It’s great to be back in potato Europe! (tiktok & twitter joke) Here’s my take on the Berlin Vegan Food Guide.

Deemed the second vegan mecca of the world, Berlin stands to compete with London. Although they’re two very similar cities, the pace of life, the way of being, and the environmental awareness of the Germans make Berlin an even easier city for vegans. Its complex history and captivating vibrant metropolis have made it arguably the counterculture capital of Europe. 

Berlin is a multicultural city where you can find restaurants from every corner of the globe. If it has thought me anything is that you can find a vegan option everywhere no matter the cuisine. 

As you can guess, putting together a guide to veganism in Berlin is quite a challenge, due to the number of places to name; something I’ve never really experienced before. But in this post, I’ll be sharing with you the places that I visited and loved!

This post is broken down into four different sections: Breakfast/Brunch, Lunch/Dinner, Breweries/Beer gardens, and Airport/Airplane. I’ll also identify the fully vegan and the vegan-friendly; this way you know what to expect from the menu before you visit. I hope this Complete Berlin Food Guide helps you find great food on your visit!

VEGGIEJEVA’S COMPLETE BERLIN VEGAN FOOD GUIDE (2023)

Breakfast/Brunch

Plant Base (Vegan)

Starting off strong with my favorite eat of the trip! This place not only has incredible vegan breakfast/brunch, they also have an amazing atmosphere. This is one of those places that made me wish I could stay longer in the city so I could go back many times. Let’s just say this place is everything I wish I had in Puerto Rico. Their tofu scramble was one of the best I’ve had in restaurants, and their bread was incredible! In the end, I couldn’t leave without their cookbook!

My Deli Love (Vegan-friendly)

Amazing place for smoothies on a hot summer’s day; their açaí smoothie was the perfect pick-me-up for the day after a long travel day. 

Lunch/Dinner

FREA (Vegan)

I couldn’t visit Berlin without stopping by one of their Michelin-rated vegan restaurants. Back in 2022, FREA was awarded a Green Michelin Star for being at the forefront of the zero waste industry. They make all the ingredients themselves, have a farm-to-table mostly locally sourced concept, and have their own compost machine right in the restaurant. Quite literally, nothing goes to waste.

As for the food, it was beyond anything I could’ve imagined! Their mushroom ceviche was to die for, as well as the aubergine-tomato dish. With their ever-changing seasonal menu, I had no idea what to expect which was a fun challenge for the planner in me.

Brewdog (Vegan-friendly)

This was the first stop after a long travel day, and it couldn’t have been a better choice. Pizza & beer is definitely the way to my heart! This place prides itself on being 50% plant-based and even hosts fully vegan Mondays and 2-for-1 pizzas on Thursdays. I went with their Vegan Spicy Meaty which had seitan strips, mushrooms, chili flakes, fresh red chili, smashed Napoli tomatoes, and vegan mozzarella.

Curry at the Wall (Vegan-friendly)

Believe it or not, this was my most anticipated stop. They offer both vegan currywürst & vegan bratwürst right in front of one of the many portions of the Berlin Wall and the Topography of Terror gallery. Now, I’ve never had currywürst before, but I can definitely say that the vegan version lives up to the hype. Next time I’m there, I’ll make sure to try the vegan bratwürst!

BRLO (Vegan-friendly)

This brewery was impressive, to say the least! They had a great indoor space and an even better outdoor space that functions as a beer garden (that was packed to the brim!). Their food concept works as a shared plate menu, which proved to be perfect to go along with the beers. One thing that took me by surprise was that their menu is entirely vegetable-focused, and meats are only side options. My favorite dishes were the roasted potatoes (no green sauce) and the wheat malt with jalapeño pesto. Brownie points for the beer puns!

Vedang (Vegan)

This place came up in almost every single vegan Berlin guide I read and with good reason! Vedang is a vegan fast food restaurant located right in the middle of The Mall of Berlin food court, which is something that can only be dreamed of on this side of the world. I wanted to try something different so I went for their impressive chicken burger, and, I honestly don’t know how they did this, but their fries tasted just like ~the clown’s~ fast food does!

Curry 36 (Vegan-friendly)

If you find yourself hungry in the streets of Berlin past midnight, look no further. Although I’m sure there have to be other places and other options, nothing beats currywürst and an ambient-temperature beer after hours!

GeorgBræu (Vegan-friendly)

This place wasn’t on my list at all; it’s one of those places that you simply stumble upon when you’re walking around. While waiting for a round of beers, I realized that their menu had vegan options! And it ended up being a great vegan lunch on my last day in the city. 

Viet Bowl (Vegan-friendly)

This is a great place to eat when you want something other than potatoes, pizza, and currywürst. Located in the Potsdamer Platz, their outdoor sitting right next to the pond proved perfect for a nice evening dinner. Ultimately, I went for their teriyaki tofu which was really good.

Other Breweries/Beer Gardens

Berlin Pavillion

Truly the beer garden that stole the show! It was so close to the hotel, and right in front of the Reichstag; making it the perfect place to stop for sitdown or to-go beers! At one point I went for a to-go beer just for the walk from there to the Victory Tower. 

Hofbräu Wirtshaus Berlin (Vegan-firendly)

You may have heard of Hofbräu beer at some point in your life; it’s one of the most acclaimed German beers. With their hometown being Munich, I was surprised to stumble upon one of their Hofbräuhaus in the middle of Berlin. And once again, while waiting for a round of beers I noticed that their menu had vegan options like schnitzell, which I hope to get to try next time.

Capital Beach

Another one of those places that you simply just stumble upon when walking. I spotted this place while crossing the bridge from the Berlin Central Station; their atmosphere with house AND live music and pink outdoor seating really stood out. I knew I couldn’t leave the city without stopping there for a round. 

Café Viktoria

Another one of my favorite spots! This beer garden gives you a full view of the Victory Tower and makes for the perfect place for a relaxing/people-watching afternoon. 

Olympiastadiom

If you ever find yourself going to a concert in Berlin, the Olympiastadiom has vegan options at its food stands and, I’m guessing that depending on the concert, a full beer garden just outside the stadium. Unfortunately, even with all of the research I did previously, this information didn’t come up so I went the safe route and ate beforehand.

Airport & Airplane Food

Condor Airlines

Flying from Puerto Rico to Berlin is no easy feat, and doing so while vegan can make for a stressful journey. I’m not going to lie, an 8-hour flight is already daunting as it is, not to mention when you have to think about airplane food. Thankfully, I could count on Condor Airlines! While researching, I was surprised to find out that for their long-haul flights, they offer vegetarian meals across all booking classes, and for an additional cost, you can order yours to be vegan or gluten-free. Below are the meal options that I had on both of my flights with them; keep in mind that the menu varies from departure airport.

Berlin and Frankfurt airports

Contrary to popular belief, Germany is a country with a rapidly growing population of vegetarians and vegans. So it came as no surprise to see so many vegan options at both airports. On my departing day back to Puerto Rico, I ended up having breakfast, more like brunch at 9 am in Frankfurt. Although there were plenty of grab-and-go options, I wanted something warm and filling for the long flight ahead, and ended up finding a bar with a Beyond burger on the menu. The burger tasted great with avocado, quinoa, lettuce, and tomatoes, but unfortunately, I had to eat really fast and wasn’t able to get a picture.

The beginning of a new year is characterized by resolutions, goal setting, habit tracking, and lifestyle changes. And what better lifestyle change than exploring the realms of veganism? Whether you want to go fully vegan or just reduce your animal-derived consumption, Veganuary is a really good place to start. Their mission goes deeper than the food aspect and approaches veganism from a non-judgemental point of view (no vegan police yay!). 

Throughout the years, they have created a mega-platform that attracts hundreds of thousands of people every year. And with good reason! They inspire and support people to try vegan, drive corporate change, and create a global mass movement championing compassionate food choices with the aim of ending animal farming, protecting the planet, and improving human health.

So, if becoming vegan or becoming as vegan as possible is on your mission this year, here are my 8 best realistic tips for doing Veganuary right, and hopefully help you establish a life-long habit. 

Do Veganuary Right With These 8 Tips

Understand your why

Veganism is first and foremost for the animals; health and environmentalism are aspects that can come with veganism, but it’s important to know that it’s not always the case. At the beginning of your journey, it’s easy to feel overwhelmed. That’s why platforms like Veganuary are ideal, as when you sign up you’ll receive free educational resources in your inbox, such as an e-cookbook, nutritional tips, daily encouragement and support, shopping advice, and restaurant recommendations. They’re basically setting you up with everything that you need in order to succeed.

Know that it’s not a diet

One of the biggest myths of veganism is that it’s a diet. It’s important to understand veganism is an activism movement and a lifestyle change; the food aspect (plant-based diet) is just a small fraction of it. My recommendation for beginners is to focus on one aspect at a time; first food and supplements, then skincare/beauty/haircare products, clothing items, household items, cleaning products, etc. Basically, first, everything that goes on the inside of your body and then everything that happens outside your body. 

Don’t strive for perfection

Words that I live by, YOU CANNOT BE 100% VEGAN IN A NON-VEGAN WORLD. Anyone that says otherwise is lying to you or/and to themselves. Unfortunately, not everyone understands this and take the form of “the vegan police”; which you’ll encounter on social media often and are quick to point out mistakes in a judgemental way. Know that those people do not represent veganism at all and that there are much kinder people who are willing to teach and guide you through it all. 

Use Veganuary as a trial and error phase, a stepping stone to the bigger picture and block out all of the background noise; I guarantee that you’ll have a much more enjoyable time.

Note: One of the biggest debates right now is about medication. In a perfect world, all medication would be vegan, but that is not the case and we have to be realistic. Please know that absolutely no one can make you feel inferior or say that you’re “not vegan enough” for taking medication. If a medication is vital to you, take it! 

Identify your favorite foods

My absolute biggest and most important tip is to veganize your favorite foods! Figuring out vegan versions of your favorite dishes is a great way to get you excited about eating plant-based, and will make the transition much more manageable. It’s certainly easier now than it was back then to adapt meals so that they’re animal-derived free; whether it’s pizza, pasta, soups, BBQs, desserts, and even cultural foods!

Organize & Plan Ahead

The more organized you are the easier it’ll be to stick to Veganuary short-term, and hopefully long-term. Work out what you’re going to eat, shop in advance, and batch cook to make your week more effortless. If you’re invited to a party, ask for the menu ahead of time so you can prepare and bring vegan versions of the food that will be there. And when you want to go out, research restaurant menus beforehand so you’ll know what your options are. It is important to not feel like you’re restricting yourself or like you’re missing out on anything during this process. 

Check and stock your pantry

Starting veganism, food-wise, doesn’t mean you have to start from zero. You might already have vegan-friendly options in your fridge and pantry; like nuts, beans, lentils, fruit, frozen/canned veggies, rice, and pasta. And if you’re missing something, take yourself out on a grocery shopping spree. Allow yourself to try products that are completely new to you like tofu or the mock-meat versions of your favorite meats; vegan ice cream is also bomb! 

Learn to read labels

This one is really important as well. On the outside, some products may look vegan-friendly when they really aren’t. Through the years the vegan industry has grown so much, but so have the people who want to make bank from it. You’ll encounter everything from “plant-based” meats that have eggs in them, to frozen broccoli that somehow has milk powder in it, and products with big “DAIRY FREE” labels but still contain casein. A lot of wine and beer may fool you too, as they can be filtered using animal products; so when in doubt, ask Barnivore.

Reading labels can be tedious and overwhelming. But fortunately, there are some useful apps out there to help you check, such as Is It Vegan?

Take advantage of technology

As I mentioned above, the vegan industry and community have grown exponentially throughout the last couple of years. Mostly thanks to technology and social media, so why not take advantage of it? There are many apps out there to ease the transition. Check out HappyCow, and many more in the App Store and Google Play for vegan-friendly restaurants near you. There are also tons of vegan content creators that are putting in the work to publish free recipes and educational content for you in the form of blogs.

Pinterest is certainly the place to go to discover a brand-new world of tasty recipes. Youtube is also an incredible resource as you’ll often find step-by-step videos to make just about any recipe, restaurant recommendations, and travel guides. And most importantly, there are medical doctors and scientists who through the years have been doing the work to make the research that backs up veganism as a legitimate lifestyle accessible. 

Note: The internet is a great educational tool, but it’s also a world full of misinformation. It’s important to be getting your information from credible sources and professionals in the field. Don’t take nutritional advice from a random influencer, take it from a registered dietitian with a specialization in plant-based nutrition. The same goes for medical, fitness, and psychological advice.

This blog post is a Call-to-Action directed toward my international audience to help Puerto Rico after Hurricane Fiona.

You’ll notice there’s no new recipe this week, and there’s a reason for that. Last weekend, Puerto Rico went through yet another atmospheric disaster, and we’re currently struggling to recover. In five years we have dealt with: a category 5 Hurricane María, multiple earthquakes, political instability, a pandemic, multiple floodings, multiple-day blackouts, forced privatizations, and now, a category 1 Hurricane Fiona. All of these events have made it incredibly hard for Puerto Rico to recover, especially on the southwest side of the island which is often neglected by our local government.

On Monday, our governor stood up in front of cameras and told the world “to not send help, we don’t need it”, all while hundreds of people lost their entire homes and belongings. Today, almost a week after Hurricane Fiona, anywhere from 65%-50% of the population still doesn’t have electricity and access to potable water; I still don’t have electricity. This percentage can dramatically increase at any given time because our electrical grid is insanely fragile and just about anything can make us go into an island-wide blackout.

There hasn’t been a lot of international coverage; while we were going through a hurricane on the anniversary of another, the world chose to look towards an irrelevant monarchy. That’s why with this post, I’m hoping to amplify the voices of local organizations that need donations for the affected communities. Despite what our governor said, many people outside the metropolitan area of the island, are in desperate need of help; I saw it with my own eyes yesterday. 

Today, I choose to use this platform to ask you for your help, in any way you can. Below you’ll find a list of different local organizations, foundations, and projects that are currently receiving donations and mobilizing efforts to aid in the most affected areas by Hurricane Fiona. But first, some things to keep in mind:

  • You do not need to feel obligated to speak up on certain topics, and sometimes it’s best if you don’t feel like you have all of the information at hand. However, consider using your platforms to amplify and uplift calls to action through shares.
  • Listen to us on the island. When we say “do not donate to the government”, we really mean it. This is due to multiple scandals after Hurricane María, where our government hid and hoarded supplies until they expired and were unusable.

Animal-focused non-profits:

Abandoned/street animals need our help more than ever after Hurricane Fiona. Many lived in the hurricane outdoors, and many live in areas that flooded.

  • Habitat: Mochileando and Mochileando 100×35 Foundation together with the San Francisco de Asis Animal Sanctuary and the Caribbean Manatee Conservation Center, join forces to rescue abandoned animals, create a foster-to-adoption program, and rescue/rehabilitate manatees in Puerto Rico.   • Save a Gato: Save A Gato manages the colony of cats on the Paseo del Morro and the rest of Old San Juan. We manage them through T/N/R. This stands for trap, neuter, and release. Cats are first trapped, then with the help of local vets, we are able to neuter, vaccinate, and de-worm the cats. The cats are then returned healthy to the Paseo to lounge and sunbathe on the rocks.   • Semillas Germinando: This movement sources seeds from other parts of the world in order to plant them in Puerto Rico. Get to know the vegan options that will soon be available at Bar.C.Lona Rooftop, a bar, and restaurant at the AC Hotel by Mariott in San Juan, Puerto Rico.

I think it’s safe to say that I love food! I research it, cook it, travel for it, and, of course, eat it. But being vegan and doing all of those things, definitely comes with challenges. You see, even in 2022 vegan options are limited everywhere, especially in Puerto Rico and its bars. I don’t know about you, but I’m tired of traditional “bar food”; burgers, wings, nachos, and the vegan option, hummus. That’s why when the AC Hotel by Mariott reached out saying that their rooftop bar was testing out vegan tapas to add to their menu, I said yes without thinking it twice! 

I have to be honest though, I went in there blind, only knowing that I was going to be served 2 tapas and 2 drinks, which made the experience all even more exciting! I’m happy to say that the food was beyond anything I was expecting and that the chef truly delivered incredible vegan options.

But before I get into the food, let’s get to know the hotel and the restaurant a little…

Location: Bar.C.Lona Rooftop- AC Hotel by Marriott

Imagine being in a relaxing atmosphere, with good music, refreshing drinks, delicious tapas, and a pool with a spectacular view of both, the city and the ocean. Sounds perfect, but where to find such a place?

The AC Hotel by Mariott has just that! A true cosmopolitan hotel that mixes urban look & feel with a hint of Mediterranean chic. If you’re staying at the hotel, after soaking up the sun on the beach or adventuring around the island, you can go back to the hotel to enjoy the outdoor rooftop pool, a meal at one of their two on-site dining options, and enjoy the city & ocean view from your room. However, if you just want to visit, you’d be happy to know that locals often refer to the rooftop as the “perfect after-work meeting point”, as it offers themed nights open to the general public and live music on occasions.  

Atop the hotel overlooking the Atlantic Ocean and the Condado neighborhood in San Juan, you’ll find Bar.C.Lona (a play with bar and Barcelona) Rooftop, a modern-urban terrace with a pool, and an elegant bar/restaurant. This upscale urban tapas bar offers a variety of tapas, beers, cocktails, and wines. One of the things I liked about the space, is that you can choose whether to enjoy your drinks and tapas in the cozy lounge with AC, or on the open-air terrace with an ocean view.

The Food Experience

As I mentioned above, I walked into this experience without knowing anything about the food, which made me both nervous and excited. But when I tell you that I was not expecting what was coming, I truly did not! Both tapas were innovative and unique, as well as the drinks, which made the experience delightful.

Upon arrival at the restaurant, I was served Bar.C.Lona’s in-house beer, made in collaboration with a local brewery Old Harbor. As a fan of Old Harbor Brewery myself, I was surprised to find out that there was an exclusive beer that can only be found there. The Light Lager beer was refreshing with light malt & hop aromas, and citrusy hints that proved to be perfect for a summer afternoon.

Then came the first tapa, a delicious veggie flatbread with a cauliflower crust. It was layered with a lentil and chipotle hummus that was just the right amount of spicy and blended perfectly with the other layers. On top, there was a beautiful array of vegetables like zucchini, mushrooms, cauliflower, cherry tomatoes, corn, red onions, peppers, and cilantro. As a finishing touch, there was a roasted red bell pepper sauce that completed the dish beautifully.

The second tapa came soon after, and this is where I ended up speechless; Vegan Paella, delivered by the chef herself. It was all there, the distinctive reddish-golden color, smoky flavor, slight caramelization, and mouth-watering aroma! This plant-based take on the delicious Valencian dish had zucchini, mushrooms, artichokes, peppers, green peas, onions, tomatoes, and locally sourced microgreens. I particularly loved the artichokes which gave the meaty texture that a traditional paella would have. 

This tapa was paired up with a bright and refreshing cocktail, which the waitress called Piña Spiced. And spiced is right! With ingredients like mezcal and chile poblano, this cocktail is bound to be fiery, however, it was perfectly balanced when paired with pineapple and lemon juice.

Bar.C.Lona (AC Hotel by Mariott)

Out of everything that Bar.C.Lona could’ve prepared, a vegan paella was what I least expected! I was so surprised that I had to let the chef know because 1. I don’t remember when was the last time I ate paella, and 2. I have never seen a vegan paella available anywhere. Overall, I had an incredible experience and the food was fantastic!

I can’t wait to see these dishes incorporated into their menu and to see what other vegan options they can come up with. With its innovative cocktail bar and creative tapas, Bar.C.Lona is a great place to enjoy with friends, a date, work colleagues, and even family.

Durante las primeras dos semanas de junio 2022 se estuvo celebrando la 9na edición del Puerto Rico Restaurant Week. El pasado sábado, tuve la oportunidad de degustar de las creaciones de El Grifo, el cuál se convirtió en el primer restaurante vegano en participar de este evento tan exclusivo.

Conóceles: 

El Grifo ha sido un proyecto de comida vegana (100% plant-based) y cervezas artesanales que me ha encantado desde sus comienzos. Ya perdí la cuenta de cuantas veces he ido, pero si les puedo decir que nunca he salido desilucionada y siempre sobrepasan las expectativas. 

Desde Caguas, se han dedicado a aportar a la industria del veganismo en Puerto Rico de una forma que nadie había hecho antes. Sus dueñxs, Loumiry y José, han logrado enraizar la cocina a base de plantas, con la producción/agricultura local y la planificación sustentable. Esto se refleja en su menú extenso de más de 30 platos, y una selección amplia de cervezas artesanales. En adición, el equipo de El Grifo también ofrece diferentes clases de cocina vegana durante todo el año.

En fin, es una propuesta vegana con una cocina contemporánea y vanguardista; siendo a su vez un espacio amigable lleno de sabores únicos, donde puedes disfrutar en un ambiente chulísimo. Diría yo que es un espacio esencial para todx vegan foodie.

La Experiencia: Puerto Rico Restaurant Week 2022

Para este evento El Grifo diseñó una experiencia única de dos menús con tres cursos cada uno, inspirados en los dos recursos más importantes de Puerto Rico y el planeta: 🌊Mar & Tierra🌎. Para experiencias similares (futuras), recomiendo ir con algún acompañante para compartir los cursos y que puedan degustar de ambos.

La experiencia comenzó, como todas las otras visitas a El Grifo, con cervezas artesanales en lo que salía la comida. Por recomendación de José, escogí Sunny Drop de Le Corsaire Microbrasserie y Nitro Noir de Kasteel. Dos cervezas totalmente opuestas, pero perfectas para comenzar la degustación.

Ahora vamos a lo que vinimos… los tiempos (cursos). El menú contó con creaciones veganas genuinas como salmón, steak y ensalada de spicy crab. Entre los ingredientes locales estaban: coliflor púrpura, viandas, hierbas, yuca, papaya, zanahoria, brócoli, remolacha, perejil, plátano, calabaza, coco, café, parcha, menta, ron, y cervezas. Nuevamente quiero recalcar la singularidad de esta oferta, pues núnca antes había visto en Puerto Rico estos platos; y ahora pensándolo bien, fuera del pais tampoco, al menos no de la forma que ellxs ofrecieron. 

Cursos: Puerto Rico Restaurant Week en El Grifo

~1ER TIEMPO~

TIERRA: CREMA DE CRUCÍFEROS Y VIANDAS PÚRPURAS

Descripción: Crema de crucíferos y viandas púrpuras, ajos negros, pan de yuca tostado, pétalos azules, y hierbas.

Tengo que confesar que no sabía que rayos eran los crucíferos, pero ahí estuvo José listo para aclarar todas mis dudas. Las verduras crucíferas son aquellas que pertenecen a la familia Brassicaceae, cómo el brocolí, repollo, coles de bruselas y coliflor. Las viandas aportaron una textura cremosa y los ajos negros fueron definitivamente el sabor más predominante. Esta combinación le dió una calidez al plato inigualable. La crema fue topada con con dollops de gel de espinacas y remolacha, un pétalo de la flow butterfly pea y microgerminados. El pan de yuca tostado le dió ese toque final, que completa el plato.

MAR: ENSALADA DE CANGREJO DE PAPAYA Y ZANAHORIAS

Descripción: Ensalada de cangrejo de papaya y zanahorias marinadas en algas, aderezadas en chiles, manzanas y mostazas.

Este fue mi plato favorito de toda la experiencia. Cómo dato curioso personal, nunca he comido pescado ni mariscos, así que mis referencias para comparar son nulas. Sin embargo, segun mi acompañante conocedor del seafood, El Grifo logró crear una ensalada de spicy crab vegana bastante precisa. Me sorprendió a sobre manera la combinación de la papaya verde y las zanahorias, marinadas en algas y bañadas en alcaparras. Como toque final, el plato fue completado con un aderezo de naranja. 

~2DO TIEMPO~

TIERRA: STEAK RELLENO DE PLÁTANO DULCE

Descripción: Steak relleno de plátano dulce envuelto en bacon de arroz, cubierto de gremolata verde acompañado de brócoli crujiente.

Este plato fue el más que esperaba con ansias. Cuando leí la descripción, realmente no sabía que esperarme pero sabía que me iba a gustar. ¿Steak vegano relleno de amarillos? Suena como un sueño y lo ¡fue! 

El “steak” fue preparado a base de garbanzos y gluten, tipo seitan, lo cual le dió una textura carnosa asombrante. Pero esto no termina ahí, el “steak” estaba envuelto en un bacon hecho a base de papel de arroz, lo cual le dió ese smokiness que complementa perfectamente cual quier carne tradicional. El mismo fue plateado sobre una cama de pureé de platano maduro también, lo cual resultó en una combinación muy dulce para mi gusto. En cambio, pienso que se hubiera beneficiado de un majado salado; pero no dejes que mi preferencia le quite estrellas a este plato. En adición, vino acompañado de broccoli perfectamente crujiente y una gremolata verde exquisita. Demás está decir que tuvo una presentación impresionante.

MAR: FILETE DE SALMÓN

Descripción: Filete de salmón marinado en remolachas, sellado en ajo, limas y alcaparras con cremoso aderezo de perejil acompañado de risotto de hojuelas de avena.

Es en este plato dónde la preparación y la dedicación por parte del equipo de El Grifo son palpables. Al igual que en el segundo tiempo de Tierra, cuando leí la descripción del plato, no tenía idea de que esperarme. Pues como desarrolladora de recetas, sé que la textura del pescado es de las más complejas en recrear cuando se trata de platos veganos. 

¡Este curso me dejó totalmente asombrada! El plato se compuso de un filete de salmón a base de tofú, el cual fue marinado en remolacha para darle ese color tan espectacular que ven en la foto, y sellado en ajo. Estaba topado con alcaparras, y un cremoso aderezo de yogur a base de cashews fermentado por más de 90 horas, además tiene perejil, mostaza, azúcar de coco y remolacha. Su textura fue asombrante, ya que más allá lograr un perfil de sabor muy distintivo, le dieron al tofu una textura fibrosa. El mismo fue acompañado con risotto de avena y setas, lo cual nunca había visto antes y me sorprendió bastante. 

~3ER TIEMPO~

TIERRA: FLAN DE CALABAZA ROSTIZADA

Descripción: Flan de Calabaza rostizada cubierto de caramelo de coco tostado sobre café espresso y corales de morena.

Una cena así de espectacular no puede cerrar sin postres que complementen la temática. Cuando vi flan de calabaza en el menú, supe inmediatamente que sería mi elección, pues no es todos los días que una persona vegana se topa con un flan que pueda comer. Absolutamente todo sobre este curso me encantó, desde la textura hasta el sabor… o más bien, sabores en plural. El shot de espresso vertido sobre el flan de calabaza balanceó perfectamente el dulce con lo amargo, y el caramelo en combinación con el coral de morena, fueron esencial como toque final. 

MAR: SPIRULINA BASQUE CHEESECAKE

Descripción: Spirulina Basque Cheesecake crema batida de yogur, “crumble” de galletas, parchas y flores.

Por otro lado, el tercer tiempo de mar lo encontré completamente único. Siendo clienta de El Grifo por años, he probado muchos de sus cheesecakes veganos, pero ninguno como este. Pues sus cheesecakes tradicionalmente son crudiveganos, y este, al contrario, fue horneado. Su preparación fue a base de yogurt de cashews, dándole este sabor semi amargo que un cheesecake no-vegano tendría. En adición, me pareció audaz la decision de hacer este cheesecake sin la corteza. En cambio, esparcieron un crumble de galletas por el plato para dar el aspecto de playa. El mismo fue topado con una crema de espirulina azul, gel de parcha y una flor comestible.

~CÓCTELES~

Para esta parte de la experiencia, El Grifo tuvo disponible dos opciones. La primera, un Spicy Beer Mojito con DonQ, Menta, Limas, Jengibre, y Cerveza Artesanal Ligera. Por otro lado, tenían el Desvelo, un coctél confeccionado con DonQ, Café Espresso, Agave, y Cerveza Artesanal Oscura. Luego de hablar con José sobre las opciones y el pareo con la comida, optamos por ordenar el Desvelo, ya que nos pareció ser el coctél más interesante y único de los dos. Y tal como recomendado, el cóctel pareó perfectamente con el segundo tiempo de Tierra, al igual que fue la transición perfecta para su tercer tiempo. 


Para finalizar, quiero felicitar a el equipo de El Grifo por este gran logro, y agradecerles una vez más por la invitación. Los dueñxs se han atrevido a hacer y desarrollar un concepto gastronómico que más nadie aquí ha intentado. Han logrado crear comida vegana vanguardista con ingredientes clásicos, lo cual le permite al degustador poder entender y disfrutar de toda la experiencia. 

Me alegra de sobre manera ver que un restaurante vegano fuese elegido para participar de esta actividad. Espero que oportunidades así sigan surgiendo en Puerto Rico para la comunidad vegana. ¡Fue una experiencia inolvidable!
