Creamy Vegan Beer and Cheese Soup with smoky vegan bacon, lager, and dairy-free cheese for the perfect summer comfort.

When you think of beer and cheese soup, you probably picture a heavy, cozy dish best enjoyed on a cold winter night. I wanted to challenge that idea by creating a vegan version that still delivers comfort enough for the autumn months. Using a smooth soy-based half and half, melty vegan cheese, and crisp local lager, I was able to bring out all the rich flavors of the classic without the heavy dairy.

This Vegan Beer and Cheese Soup combines pub-style flavors with autumn vibes. It pairs perfectly with a fresh salad or crusty bread, making it easy to enjoy even when the weather is still cooling down (that’s still not the case in Puerto Rico, but that won’t stop me from enjoying soups!). The beer adds depth, the vegan bacon gives a smoky bite, and the creamy base ties everything together. It’s proof that comfort food does not need a season, especially when it is made with plant-based ingredients that feel lighter on the stomach.

The making of: Vegan Beer & Cheese Soup

The process of making this soup is simple and incredibly rewarding. I start by crisping up the vegan bacon in a large pot, letting it release its smoky flavor into the oil. Once it’s cooked, I remove it from the pot and use the rendered fat to sauté the onions, garlic, and a bit of flour to create the base. Next, I add the potatoes, carrots, and celery, followed by the vegetable broth and a generous pour of local lager beer. The beer deglazes the pan beautifully, infusing the vegetables and broth with that signature malty depth.

When the potatoes and carrots are tender, I blend everything until smooth using an immersion blender (or carefully in a stand blender once cooled slightly). Then, I stir in the soy half-and-half and fold in the vegan cheese until it melts into a velvety, rich broth. I love using a mix of cheddar-style vegan cheeses for balance and creaminess. Once it all comes together, the soup is thick, flavorful, and perfect for cozy weather or any time you’re craving a hearty bowl. Vegan beer and cheese soup might not be the most traditional choice, but it’s one that always surprises and satisfies.

Vegan Beer & Cheese Soup

Ingredients

  • 4 slices vegan bacon, chopped
  • 2 tbsp vegan butter or olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 2-4 golden potatoes, cubed
  • 1-2 carrots, cubed
  • 2 celery sticks, diced
  • 1 cup local lager beer
  • 2 cups vegetable broth
  • 1 cup soy-based half & half (unsweetened)
  • 2 cups shredded vegan cheddar-style cheese
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Chopped green onions, for garnish

Procedure

  1. Heat a large pot over medium heat. Add the chopped vegan bacon and cook until crispy, about 5 minutes. Remove the bacon from the pot and set it aside, leaving a bit of the rendered oil in the pot. 
  2. Add vegan butter, onion, and garlic. Sauté until softened and fragrant, about 5 minutes.
  3. Sprinkle in the flour and stir well to coat the onions. Cook for 1 minute to remove the raw flour taste.
  4. Add the potatoes, carrots, and celery. Pour in the beer to deglaze the pot, scraping up any bits stuck to the bottom. Add the vegetable broth and bring to a gentle simmer. Cook until the potatoes and carrots are tender, about 15-20 minutes.

  5. Using an immersion blender, blend the soup until smooth. (If using a regular blender, let the soup cool slightly first to avoid splattering.)
  6. Return the soup to low heat. Stir in the soy half-and-half, then add the shredded vegan cheese a handful at a time, stirring until melted and creamy.
  7. Season with smoked paprika, salt, and black pepper to taste. Stir the vegan bacon back into the pot, reserving some for garnish if desired.
  8. Serve hot, topped with extra vegan bacon, cheese, and chopped green onions. ENJOY!

Notes

-Gluten-Free Option: To make this soup gluten-free, use a 1:1 gluten-free all-purpose flour blend for thickening and choose a certified gluten-free lager. Double-check that your vegan bacon and cheese are also labeled gluten-free. -Soy-free Option: To make this soy-free, you’ll need to use a soy-free creamer, but homemade cashew cream with nutritional yeast would probably work best. If you can’t find soy-free cheese, you can leave it out as the nutritional yeast offers a similar flavor profile. -Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop over low heat, stirring often to maintain the creamy texture. Avoid boiling after adding the cheese to prevent separation. -Beer Alternatives: If you prefer to skip the beer, substitute with additional vegetable broth and add 1 tablespoon of apple cider vinegar or lemon juice to bring back some brightness and depth.

While the original version delivered a zesty, tangy punch with lemon, this variation embraces the bright, sunny flavors of orange, perfectly capturing the vibrant, tropical feel of Miami—the setting of Dexter. The olive oil adds a richness and moist texture to the cake, balancing the citrus beautifully. This cake layer forms the heart of the trifle, providing a fragrant, soft base that soaks up the vegan cheesecake filling and blood orange syrup, creating a truly indulgent and harmonious flavor experience.

Whether you’re a die-hard fan of the show or just looking for a fun, spooky dessert, this recipe delivers on taste, texture, and twisted fun.

Blood Splatter Orange Cheesecake Trifle (Dexter)

Ingredients

Orange Olive Oil Cake:

  • ¾  cup olive oil
  • ½  cup unsweetened apple sauce
  • 1 cup unsweetened plant-based milk, I use coconut
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh orange zest
  • ½ tsp pure vanilla extract
  • 1 ½  cup brown sugar
  • 2 cups all-purpose flour
  • 1 ½  tsp baking powder
  • ½  tsp baking soda
  • 1 tsp salt

Orange Cheesecake filling:

  • 16oz vegan cream cheese
  • 1 ½ cups confectioners sugar
  • 3 tbsp orange juice
  • 1 tsp vanilla extract

Blood-y Orange Syrup:

  • 2 cups sifted confectioner's sugar
  • 2-4 tbsp orange juice
  • 1 tsp vanilla extract
  • A few drops of red food coloring, oil-based

Other ingredients:

  • Vegan Whipped Cream

Procedure

Orange Olive Oil Cake:

  1. Preheat the oven to 350 F. Line the bottom of an 8″ or 9″ cake pan with a piece of parchment paper. Generously spray the pan with cooking spray and set it aside.
  2. In a mixing bowl whisk together olive oil, apple sauce, non-dairy milk, orange juice, orange zest, almond & vanilla extract, and sugar until the mixture is thick and consistent. 
  3. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet, whisking until the dry ingredients are evenly hydrated and the batter is thick and smooth.
  5. Pour cake into the prepared pan and bake for 50-70 minutes, or until a toothpick inserted in the middle comes out clean. 
  6. When done, remove from oven and let cool for about 30 minutes. Then flip the cake onto a cooling rack, and allow it to cool completely.

Orange Cheesecake Filling:

  1. Using a stand or a hand mixer, mix all of the cheesecake filling ingredients on high speed for about 2 minutes. 
  2. Once done, transfer the mixture to a bowl, cover with lid, and refrigerate until ready to serve.

Blood-y Orange Syrup:

  1. In a bowl, whisk together sifted powdered sugar, orange juice, vanilla extract, and food coloring. 
  2. Adjust orange juice as necessary to achieve a thin glaze for drizzling or pouring over the trifle. The glaze should be smooth with no lumps.
  3. Store in an airtight container. Note: When stored in a refrigerator, this “syrup” will harden as it’s more like a glaze. For serving, allow the mixture to melt at room temperature and remix if separation happens. 

Assemble:

  1. Once the cake is completely cooled, decide how you want to assemble the trifle. You can either cut the cake in small cubes, cut it in circles using a cookie cutter, or break it with your hands into medium-sized pieces for a messier look. 
  2. Either in a tall glass or whiskey glass, layer the trifle as follows: a drizzle of the blood-y orange syrup, followed by pieces of cake and then cheesecake filling. Repeat that pattern until you reach the top of the glass, and top the trifle with some whipped cream. 
  3. Refrigerate until ready to serve, and ENJOY!

Notes

For a gluten-free cake, use gluten-free flour.

Okay, I think I may have just invented something… Vegan Avocado Toast Grilled Cheese! I literally cannot find a single piece of evidence of something that resembles this meal.

What do you think?

You may think that there is nothing special about making bread with cheese… that’s somewhat true. But this recipe is intended to give you a remarkable version of the typical grilled cheese.

Meet the perfect combination of an American classic with an Australian classic. This tasty sandwich is loaded with vegan melty cheddar cheese and buttery avocado, complete with crunchy rosemary sourdough.

It’s very easy and quick to make. Although you can make it a little bit more complex by adding other ingredients such as tomato, jalapeños, vegan bacon, mushrooms, or caramelized onions. 

I hope you enjoy this as much as I did!

Notes:

  • For the cheese, choose a vegan cheese that’s known for melting! For American cheese, I like Follow Your Heart, and for cheddar cheese I like Miyokos.
  • As for the bread, I love using sourdough. The tangy flavor and slightly chewy texture you’ll find in sourdough is an ideal match to the sharp-tasting cheddar. However, you can use whichever bread you prefer. 
  • To keep this recipe gluten-free, use gluten-free bread. 
  • Butter both sides of each slice of bread to get the perfect level of crispiness.

Vegan Avocado Toast Grilled Cheese

Ingredients

  • 2 slices bread
  • 2-3 slices vegan cheddar cheese
  • ½ -1 avocado 
  • Vegan butter, as needed

Procedure

  1. Start heating up a non-stick pan to medium heat.
  2. Spread vegan butter on each side of the slices of bread. Then start slightly toasting each side of bread slice.
  3. Place cheese slices on bread and sandwich together.
  4. Heat skillet on medium-low and cook sandwich on each side for approximately  3-4 minutes until golden brown.
  5. While the sandwich is cooking, thinly slice the avocado.
  6. When ready, remove the sandwich from the pan. Serve, place avocado slices on top, along with your desired toppings. ENJOY!

Plastic-free July is just around the corner and this time I want you to be prepared.

The Plastic Free July campaign is led by the Plastic Free Foundation, created in 2017 as an independent non-profit organization. According to their website, Plastic Free July also holds an awards event to promote a world without plastic waste.

Although it’s relatively new, this campaign has already made big waves. I understand and believe that corporations are the ones mainly responsible for the state of our world right now, but individual action is a good place to start, as the system operates on a supply & demand basis. 

It is important to understand that eliminating plastic from your life won’t be easy, it’s actually essentially impossible. Just as one cannot be 100% vegan in a non vegan world, one cannot be plastic-free while living in a system that perpetuates the use of plastic. So I want you to focus on reduction instead of elimination. Ask your friends & family to join in and support you in creating new long-term habits while reducing plastic consumption. 

Where to Start

  • Choose unpackaged fruits and veggies: Nowadays most supermarkets sell 90% packaged food. Even fresh fruits and vegetables are victims of this. Instead, pick loose fruit and vegetables at supermarkets, or visit a farmers market where plastic packaging is less often used.
  • Say no to plastic bags: Luckily, over the past couple of years, countries all over the world have banned plastic bags at stores and supermarkets. Although some stores have found loopholes and charge extra for the plastic bags instead. Just make sure to always carry a reusable bag when going shopping. 
  • Get a refillable water bottle: As a person who drinks a lot of water (seriously a lot), changing to a refillable water bottle 4 years ago has been one of the best things I’ve done. Not only have I saved SO much money, I’ve also managed to almost completely eliminate my plastic bottle usage. My top picks are Thermoflask, W&P, and Yeti.
  • Get a reusable coffee cup: If you’re the type of person that gets coffee out almost every day, I get you! When I used to work 40hrs at an office, that was my daily thing. But in the last year I’ve really tried to bring a coffee cup with me when I go to a coffee shop. This has been a little bit easier since Four Sigmatic gifted me a collapsible cup (I’ll link one below).
  • Say no to plastic straws: Look, unless you’re drinking a really thick drink, there’s really no reason to use straws at all. But if you absolutely have to, purchase a stainless steel or a glass straw that you can carry around with you.
  • Limit take-out: Not only can eating take-out constantly be super expensive, but it can also be incredibly damaging to the environment. Between the bag, the styrofoam/plastic bowls and the plastic utensils. Luckily many restaurants are picking up on the plastic-free trend and have switched to biodegradable food packaging and paper bags. When ordering out ask for the least amount of packaging as possible and skip the utensils.
  • Reduce, reuse & recycle: This one’s a classic- three r’s for a better planet. Reduce your consumption of plastic, but reuse as much as possible the one that you do end up buying, and recycle the one you can’t reuse.

It’s that time of month where I share with you the MONTHLY PRINTABLE CALENDAR. This one is a little bit behind schedule… Unless you’ve been literally living under a rock, you must have seen that the Black Lives Matter Movement went GLOBAL. As a way to protest while on lockdown, I joined the #amplifymelanatedvoices, stopped sharing all scheduled food content for a week, and shared instead resources & information that would aid the movement. Hence this calendar getting published a week later.
