Satisfy your sweet tooth with this healthy no-bake Vegan Coconut Bars recipe! These soft, chewy bars are healthy dessert heaven and made with only 6 ingredients, you’ll never guess these decadent-tasting candy bars are healthy!

Macadamia-Coconut BarsI’m a big fan of coconut treats, and this recipe ticks all the boxes: simple, few ingredients & cost effective. They’re not raw, but they don’t require any baking, and they come together with only 6 ingredients. Most importantly, they are intensely, supremely satisfying, seriously addictive and take minutes to whip up! Once you bite into these chewy coconut bars you’ll know exactly what I’m talking about!

IMG_9104Are these Coconut Bars healthy?

Amazingly, yes! They contain lots of good fats: desiccated coconut, coconut cream, coconut oil & nuts.

But what about the sugar?

For this recipe, I used date syrup, which is less sweet than agave, honey, or maple syrup. Its benefits include low-Glycemic index food, high fiber content, & 78% invert sugar. However, if you can’t find date sugar, natural maple syrup will work just fine.

Macadamia-Coconut BarsVariations:

  • Trade the macadamia nuts for cashews or almonds
  • Cover the bars in chocolate to create vegan mound bars!
  • Try adding dried berries to the mix: cranberries or goji berries

Keep them in the fridge and serve straight from there. They will stay fresh for a week (or even longer) when kept stored in a covered container, though let’s face it, they will never last that long!

Recipe: Macadamia-Coconut Bars

Ingredients:

  • 2 cups shredded coconut (unsweetened)
  • ½ cup raw macadamia nuts
  • ½ cup raw cashews
  • ⅓ cup coconut cream
  • Optional: 4 tbsp coconut oil
  • Optional: date, agave or maple syrup (to taste)

Procedure:

  1. Blend all ingredients in a food processor.
  2. Line 8×4 pan with parchment paper & press down coconut mix.
  3. Place in the fridge for approximately 20 minutes and let set.
  4. Remove from fridge & cut into bars.

KuDough's.png“Mmm donuts” is probably the best thing Homer Simpson has ever said. I absolutely love donuts, but since becoming vegan, finding donuts has been really hard. So naturally, when I heard that a new local shop had vegan donuts, I had to go. Last week we visited Kudough Donuts (for the sixth time, oops), a local company serving gourmet handmade doughnuts, located in Calle Cerra, Santurce.

This place was definitely created for people who love unique food experiences! Their main focus is brioche dough donuts & vegan donuts; some made with champagne, whiskey, hazelnut spread, key lime pie, vegan passion fruit cream, well you name it, they might have it!

Each doughnut has its own personality; none of them are exactly the same shape or size, which allows you to appreciate the handmade quality of the product. Keep in mind that the menu changes frequently, so the same doughnuts aren’t always available every day.

IMG_3769IMG_3869The interior of the shop reveals beautifully handcrafted KuDonuts, as well as locally crafted beers, cocktails, coffee, and wine.

IMG_3755For now, they only have two vegan donuts available: braided glazed donut and, coconut & passion fruit cream filled donut. After visiting a couple of times and trying them both, I have to say that I absolutely love the one filled with coconut & passion fruit. I was very skeptical at first, but it turned out to be super refreshing with a nice cream to donut ratio. The main ingredients are Sir Galahad Enriched Artisan Flour, coconut milk & coconut oil.

IMG_3846Oh, and they pair amazingly well with an Ocean Lab beer since it has an orange aftertaste, in a lovely & cozy environment.

IMG_3842The donut shop is dangerously close to my university, which means that I might be going there more times than I should. But I definitely don’t mind! It’s always an enjoyable experience and the perfect place to indulge before class.

If you find your self in Santurce, definitely check the place out, it will not disappoint.
